Low Calorie BLT Pasta Salad

Today on the Tami Dunn YouTube channel, Kevin made Low Calorie BLT Pasta Salad. The depth of flavor of this pasta salad is a huge surprise and you get a lot for the calories.

Low Calorie BLT Pasta Salad Recipe

Ingredients

8 ounces (uncooked weight) cooked large elbow macaroni

28 oz can Whole Peeled Tomatoes

4 bacon slices, cooked and crumbled (we use 25% lower fat bacon)

3 cups very thinly sliced iceberg lettuce

1/2 cup light mayonnaise

1/2 cup light sour cream

1 tablespoon Stone Ground Mustard

1 teaspoon sugar

2 teaspoons cider vinegar

1 teaspoon salt

1 teaspoon pepper

Instructions

Cook macaroni noodles, drain excess water and allow to cool. Fry bacon. Drain juice from can of tomatoes and dice all tomatoes. Remove as many of the seeds as possible.

Combine macaroni, crumbled bacon, diced tomatoes and lettuce in a large bowl.

In a smaller bowl, combine all remaining ingredients and stir well. Add this mixture to the large bowl with the macaroni. Coat all pieces. Separate into smaller bowls or store in one large bowl. Keep covered.

  1. If I were to use fresh tomatoes (we will be overwhelmed very soon!) about how many cups of chopped and seeded tomatoes do you think the canned tomatoes end up being?
