Yorkshire Parkin for Bonfire Night

On the Tami Dunn YouTube channel, I made a Traditional Yorkshire Parkin. This is a moist, oaty cake traditionally eaten on Bonfire Night. Frankie sent me this recipe from the UK, so that we could be a part of the celebration. I followed the recipe below:

* The only ingredient that I varied on was brown sugar by using light instead of dark.

It’s a delicious cake on its own with no custard:

However, I agree with Frankie. Custard is a must! It takes this cake from a 9 to a solid 10.

The picture above was taken on the first day we made the custard. The picture below shows how thick it becomes after a few days in the refrigerator.

I’ll be honest though, thick or thin – it’s ALL good 🙂
